Boneless Pork Loin Roast

Yield: 6 Servings


1/2 tspĀ  Garlic Powder
1 (4 lb.) boneless pork loin, tied
3 large leeks
6 shallots, finely chopped
2 cups dry white wine or vermouth
1 cup stock (chicken, pork or veal)
4 tbsp. Dijon mustard
Salt & pepper


  1. Rub pork loin with garlic powder, salt and pepper
  2. 2. Roast in a 350 degree oven for 1 hour.
  3. Slice leeks and place around pork.
  4. Roast 1 hour longer. Remove roast from pan and keep warm on platter.
  5. Add white wine to roasting pan and broil to taste.
  6. Add stock and mustard. Reduce heat.
  7. Slice pork and spoon leek sauce over meat.
